Fire & Ice Wine Dinner



Be one of the first to experience Château Chantal’s first annual "Fire and Ice Wine Dinner". Hosted on Saturday evening January 27, 2018 as part of our first annual "Ice Wine Festival" event. Each course of the dinner will pair synergistically with a wine hand-selected by our vintner. Satiate your palate with dishes that pair harmoniously with all three of our Ice wine products: Vidal Ice wine, Entice (our ice wine port-style wine), and our “ liquid gold“ Estate bottled Ice Wine. Other wines will also be featured during the dinner to deliver an experience that is unmatched. This price includes food, wine, tax and tip.




1st course

Poached pear stuffed with chevre and topped with granulated sugar

and caramelized. Served over a bed of baby arugula with walnuts,

and a raw honey tarragon vinaigrette

2nd course

Fire roasted pepper bisque

Roasted red pepper and poblano bisque with smoked gouda and served with a crostini with

chipotle rouille

Potato gnocchi, Dragon’s breath (bleu cheese) cream sauce

Koulibiac of Sustainable Trout
Puff pastry filled with trout, rice, mushrooms, egg and herbs

Petite filet with blood orange and balsamic gastrique

Citrus whipped potato, demi and seasonal vegetables

Winter Salad
Roasted root vegetables, bitter greens, hazelnuts and dried cranberry
in a shallot vinaigrette

Vidal Ice Wine


 7th course

Bananas Foster ice cream in a pool of

Grilled banana puree. Served with a flambéed Brandied caramel sauce prepared tableside.
